Simple Cucumber Avocado Rolls
Ingredients
- 1 cup sushi rice, cooked
- 2 sheets nori seaweed
- 0.5 cucumber, thinly sliced
- 0.5 avocado, thinly sliced
- 2 tbsp rice vinegar
- Soy sauce and wasabi for serving
Steps
- Season cooked sushi rice with rice vinegar. Let cool slightly.
- Place a sheet of nori on a bamboo mat. Spread a thin layer of rice over 2/3 of the nori, leaving a border.
- Arrange cucumber and avocado slices horizontally across the rice.
- Carefully roll the nori tightly from the bottom edge using the bamboo mat. Slice into 6-8 pieces. Serve with soy sauce and wasabi.
