Creamy Tomato Soup & Grilled Cheese
Ingredients
- 1 tbsp olive oil
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 2 cups vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- Bread slices (e.g., sourdough or white)
- Cheese slices (e.g., cheddar, provolone)
- Butter for grilling
Steps
- Heat olive oil in a pot. Sauté onion until softened, then add garlic and cook for 1 minute.
- Stir in crushed tomatoes and vegetable broth. Bring to a simmer and cook for 15 minutes.
- Remove from heat. Blend soup until smooth using an immersion blender or standard blender (carefully). Stir in heavy cream, season with salt and pepper.
- Butter one side of each bread slice. Place cheese between two unbuttered sides. Grill in a pan over medium heat until golden brown and cheese is melted.
