Authentic Thai Green Curry with Chicken
Ingredients
- 1 tbsp coconut oil
- 1 lb chicken breast, sliced
- 2-3 tbsp green curry paste
- 1 can (13.5 oz) coconut milk
- 1/2 cup chicken broth
- 1 bell pepper, sliced
- 1/2 cup bamboo shoots, sliced
- Fish sauce to taste
- Fresh basil leaves for garnish
Steps
- Heat coconut oil in a large pot or wok. Add chicken and stir-fry until almost cooked through. Remove chicken and set aside.
- Add green curry paste to the pot and stir-fry for 1 minute until fragrant.
- Pour in coconut milk and chicken broth, stirring well. Bring to a simmer.
- Return chicken to the pot. Add bell pepper and bamboo shoots. Simmer for 10-15 minutes until chicken is cooked and vegetables are tender-crisp. Season with fish sauce. Serve with jasmine rice and fresh basil.
