Basic Chicken Congee

Ingredients

  • 1/2 cup white rice
  • 6 cups chicken broth
  • 1 small chicken breast
  • 1-inch ginger, sliced
  • Salt to taste
  • Green onions for garnish

Steps

  1. Rinse rice. Combine rice, chicken broth, chicken breast, and ginger slices in a large pot.
  2. Bring to a boil, then reduce heat to low and simmer, partially covered, for 45-60 minutes, stirring occasionally, until rice breaks down and thickens.
  3. Remove chicken breast, shred it, and return to the congee. Season with salt.
  4. Serve hot, garnished with chopped green onions.
