Quick Chicken Pad Thai
Ingredients
- 8 oz flat rice noodles
- 2 tbsp oil
- 8 oz chicken breast, sliced
- 2 eggs, scrambled
- 1/4 cup Pad Thai sauce
- Bean sprouts, chopped peanuts, lime wedges
Steps
- Cook rice noodles according to package directions, rinse with cold water, and set aside.
- Heat oil in a large skillet or wok. Add chicken and cook until browned. Push to one side.
- Add scrambled eggs to the other side and cook until set. Combine with chicken.
- Add cooked noodles and Pad Thai sauce to the skillet. Toss everything together until well combined. Stir in some bean sprouts. Serve with chopped peanuts and lime wedges.
