On a rainy day, a hearty bowl of lentil soup is my absolute go-to. It warms me from the inside out and always makes me feel so wonderfully comforted.

Spiced Moroccan Lentil Soup

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup brown or green lentils, rinsed
  • 4 cups vegetable broth
  • 1 carrot, diced
  • 1 tsp cumin
  • 1/2 tsp turmeric

Steps

  1. Heat olive oil in a large pot. Sauté onion until softened, then add garlic, cumin, and turmeric, cooking for 1 minute.
  2. Stir in rinsed lentils, vegetable broth, and diced carrot.
  3. Bring to a boil, then reduce heat, cover, and simmer for 40-50 minutes, or until lentils are tender.
  4. Season with salt and pepper to taste. Serve hot, perhaps with a squeeze of lemon.
