Simple Jollof Rice

Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) crushed tomatoes
  • 1/2 cup tomato paste
  • 3 cups long-grain parboiled rice
  • 4 cups chicken or vegetable broth
  • 1 tbsp curry powder
  • 1 tsp thyme
  • Scotch bonnet pepper (optional)

Steps

  1. Heat oil, sauté onion and bell pepper until soft.
  2. Add crushed tomatoes, tomato paste, curry powder, and thyme; cook 10 min.
  3. Stir in parboiled rice and broth. Add whole Scotch bonnet if using.
  4. Bring to boil, reduce heat, cover tightly, and simmer 25-30 min until liquid absorbed.
  5. Fluff with a fork and serve.
