Sunrise Breakfast Burrito
Ingredients
- 4 large tortillas
- 4 large eggs, scrambled
- 1/2 cup black beans, rinsed
- 1/4 cup salsa
- 1/2 avocado, sliced
- 1/4 cup shredded cheese
Steps
- Warm tortillas in a pan or microwave.
- Cook scrambled eggs.
- Assemble burritos: layer scrambled eggs, black beans, salsa, avocado, and cheese on each tortilla.
- Fold in sides, then roll up tightly.
- Serve immediately, perhaps with extra salsa.
