Fiery Chicken Curry
Ingredients
- 1 lb chicken breast, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 2 tbsp curry powder
- 1 cup coconut milk
- Chili flakes (optional)
Steps
- Sauté onion and garlic until soft.
- Add chicken and cook until browned.
- Stir in curry powder, then diced tomatoes and coconut milk.
- Simmer for 20-25 minutes until chicken is cooked through.
- Add chili flakes if desired, serve with rice.
