Spicy Nigerian Jollof Rice

Ingredients

  • 2 cups parboiled rice
  • 1 can chopped tomatoes
  • 1 large onion, chopped
  • 2 red bell peppers
  • Habanero pepper to taste
  • Chicken stock or water

Steps

  1. Blend tomatoes, bell peppers, and habanero until smooth. Sauté chopped onion in oil until translucent.
  2. Add blended pepper mixture to onions and fry until oil separates. Add tomato paste and fry for another 5 minutes.
  3. Pour in chicken stock, season with salt and spices (thyme, curry powder). Bring to a boil.
  4. Add parboiled rice, stir, cover tightly, and reduce heat to low. Cook for 25-30 minutes until rice is tender.
  5. Fluff with a fork and serve hot.
