Fiery Thai Green Curry
Ingredients
- 1 tbsp coconut oil
- 2 tbsp green curry paste
- 1 can (13.5 oz) coconut milk
- 1/2 cup chicken or vegetable broth
- 1 lb chicken breast or firm tofu, sliced
- 1 cup mixed vegetables (e.g., bell peppers, bamboo shoots)
- Fish sauce or soy sauce to taste
- Fresh cilantro and lime wedges for garnish
Steps
- Heat coconut oil in a large pot or wok over medium heat. Add green curry paste and cook for 1 minute until fragrant.
- Stir in coconut milk and broth, bring to a simmer. Add chicken or tofu and vegetables.
- Cook for 10-15 minutes, or until chicken is cooked through and vegetables are tender. Season with fish sauce or soy sauce.
- Serve hot with rice, garnished with fresh cilantro and lime wedges.
