Fragrant Chicken & Vegetable Tagine
Ingredients
- Chicken thighs
- Carrots
- Potatoes
- Onion
- Ras el hanout spice blend
- Canned diced tomatoes
- Olives
Steps
- Sauté onion, then brown chicken thighs in a tagine or heavy pot.
- Add carrots, potatoes, Ras el hanout, and diced tomatoes.
- Add a little water, cover, and simmer for about an hour until chicken is tender.
- Stir in olives during the last 10 minutes.
- Serve with couscous or bread.
