After a busy week, a quiet evening in with some homemade sushi makes me feel incredibly relaxed. The meticulous rolling is almost meditative, and the fresh flavors are so satisfying.
Simple California Rolls
Ingredients
- 1 cup sushi rice, cooked and seasoned
- 2 sheets nori
- 1/2 avocado, sliced
- 1/2 cucumber, julienned
- 3 crab sticks (surimi), halved lengthwise
- Soy sauce, pickled ginger, wasabi for serving
Steps
- Place a sheet of nori on a bamboo mat, shiny side down. Spread a thin, even layer of sushi rice over 2/3 of the nori, leaving a 1-inch strip bare at the top.
- Arrange avocado, cucumber, and crab sticks horizontally across the center of the rice.
- Starting from the bottom, roll the mat tightly, pressing firmly. Moisten the bare edge of the nori with water and seal the roll.
- Carefully slice the roll into 6-8 pieces with a sharp, wet knife. Serve with soy sauce, pickled ginger, and wasabi.
