Living abroad, I sometimes get a pang of homesickness. When that happens, I make a big shepherd’s pie – it tastes just like my mum’s and brings a piece of home to me.
Hearty Shepherd's Pie
Ingredients
- 1 tbsp olive oil
- 1 lb ground lamb or beef
- 1 onion, chopped
- 1 carrot, diced
- 1 cup frozen peas
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 2 lbs potatoes, peeled and quartered
- 1/2 cup milk
- 2 tbsp butter
- Salt and pepper to taste
Steps
- Preheat oven to 375°F (190°C).
- Heat oil in a large skillet. Brown lamb/beef. Drain fat. Add onion, carrot, peas; cook until tender.
- Stir in broth, tomato paste, thyme. Simmer for 10 minutes. Transfer to a baking dish.
- Boil potatoes until tender. Mash with milk, butter, salt, and pepper.
- Spread mashed potatoes over meat mixture. Bake for 25-30 minutes, or until golden brown.
