Whenever I feel a bit homesick, all I crave are my grandmother’s pierogi. That first bite instantly takes me back to her kitchen, surrounded by family laughter.

Simple Potato and Cheese Pierogi

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup warm water
  • 1 large egg
  • 1/2 tsp salt
  • 2 medium potatoes, boiled and mashed
  • 1 cup farmer's cheese
  • 1/4 cup chopped onion, caramelized
  • Salt and pepper to taste

Steps

  1. 1. Combine flour, water, egg, and salt to form a dough; knead until smooth and let rest. 2. Mix mashed potatoes, farmer's cheese, caramelized onion, salt, and pepper for filling.
  2. 2. Roll out dough, cut into circles, place a spoonful of filling on each, fold, and crimp edges.
  3. 3. Boil pierogi in salted water until they float, then pan-fry with butter and onions until golden.
