Creamy Tomato Soup with Crispy Grilled Cheese

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 3 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 4 slices bread
  • 2 slices cheddar cheese
  • 2 tbsp butter

Steps

  1. 1. For soup: Sauté onion and garlic in olive oil. Add crushed tomatoes and broth, simmer for 15 minutes. Stir in cream, season, and blend until smooth.
  2. 2. For grilled cheese: Butter one side of each bread slice. Place cheese between unbuttered sides.
  3. 3. Cook sandwiches in a preheated pan over medium heat, butter-side down, until golden and cheese is melted, about 3-4 minutes per side.
  4. 4. Serve hot soup with grilled cheese sandwiches for dipping.
