Simple Berry Tart with Pastry Cream
Ingredients
- 1 pre-baked tart shell (9-inch)
- 1 cup milk
- 2 egg yolks
- 1/4 cup sugar
- 2 tbsp cornstarch
- 1 tsp vanilla extract
- 2 cups mixed fresh berries
Steps
- 1. Whisk egg yolks, sugar, and cornstarch. Heat milk until simmering, then slowly whisk into egg mixture.
- 2. Return mixture to saucepan and cook over medium heat, stirring constantly, until thickened. Remove from heat, stir in vanilla, and let cool completely (cover with plastic wrap touching the surface).
- 3. Once pastry cream is chilled, spread it evenly into the pre-baked tart shell.
- 4. Arrange fresh berries decoratively over the pastry cream. Chill for at least 30 minutes before serving.
