On a cold evening, a big bowl of chili makes me feel so grateful for simple, hearty food and warmth.

Hearty Beef Chili

Ingredients

  • Ground beef
  • Canned diced tomatoes
  • Kidney beans
  • Chili powder
  • Onion
  • Bell pepper
  • Garlic
  • Cumin
  • Shredded cheddar cheese

Steps

  1. Brown ground beef in a large pot, then drain excess fat. Remove beef and set aside.
  2. Sauté chopped onion, bell pepper, and minced garlic in the same pot until softened.
  3. Return beef to the pot, add diced tomatoes, rinsed kidney beans, chili powder, and cumin. Stir well.
  4. Bring to a simmer, then cover and cook for at least 45 minutes, stirring occasionally. Serve hot, topped with shredded cheddar cheese.
