Classic Bobotie
Ingredients
- 1 tbsp olive oil
- 1 large onion, chopped
- 1 lb ground beef
- 1 slice bread, soaked in 1/4 cup milk
- 1 tbsp curry powder
- 1 tbsp apricot jam
- 2 eggs
- 1 cup milk
- Bay leaves
Steps
- Preheat oven to 350°F (175°C). Sauté onion in olive oil, then add ground beef and brown.
- Squeeze milk from bread and crumble into meat. Stir in curry powder and apricot jam. Cook 5 minutes.
- Press meat mixture into a baking dish. Whisk remaining milk with eggs and pour over meat.
- Arrange bay leaves on top. Bake for 40-45 minutes until custard is set and golden.
- Serve hot with yellow rice and chutney.
