Hearty Beef Goulash
Ingredients
- 2 tbsp olive oil
- 1.5 lbs beef stew meat, cut into cubes
- 2 large onions, sliced
- 2 tbsp sweet paprika
- 1 tsp caraway seeds (optional)
- 4 cups beef broth
- Salt and pepper to taste
Steps
- Heat oil in a large Dutch oven over medium-high heat. Brown beef in batches, then remove.
- Add onions to the pot and cook until softened, about 8-10 minutes. Stir in paprika and caraway seeds, cook for 1 minute.
- Return beef to the pot. Add beef broth, salt, and pepper. Bring to a simmer, then reduce heat to low.
- Cover and cook for 2-2.5 hours, or until beef is fork-tender. Serve with egg noodles or crusty bread.
