Sweet Mango Sticky Rice
Ingredients
- 1 cup glutinous rice
- 1 can (13.5 oz) coconut milk
- 1/2 cup granulated sugar
- 1/4 tsp salt
- 2 ripe mangoes, peeled and sliced
- Toasted sesame seeds for garnish
Steps
- Rinse glutinous rice until water runs clear. Soak for 30 minutes, then steam for 20 minutes until cooked and translucent.
- While rice steams, heat coconut milk, sugar, and salt in a saucepan over medium heat until sugar dissolves. Do not boil.
- Pour half of the coconut milk mixture over the hot steamed rice. Stir well, cover, and let sit for 10 minutes.
- Serve warm sticky rice with fresh mango slices. Drizzle with remaining coconut sauce and sprinkle with sesame seeds.
