Colorful Vegan Buddha Bowl
Ingredients
- 1 cup cooked quinoa
- 1 cup roasted sweet potato cubes
- 1 cup steamed broccoli florets
- 1/2 cup chickpeas, roasted or pan-fried
- 1/4 cup sliced avocado
- Lemon-tahini dressing
Steps
- Prepare quinoa according to package instructions. Roast sweet potatoes until tender.
- Steam broccoli until tender-crisp. Roast or pan-fry chickpeas until slightly crispy.
- Arrange quinoa, sweet potatoes, broccoli, chickpeas, and avocado in a bowl.
- Drizzle generously with lemon-tahini dressing and serve.
