Quick Chocolate Lava Cakes

30 minutes • Medium

Ingredients

  • 1/2 cup unsalted butter
  • 4 oz bittersweet chocolate, chopped
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 2 tbsp all-purpose flour

Steps

  1. Preheat oven to 425°F (220°C). Grease and flour four 6-ounce ramekins.
  2. Melt butter and chocolate together in a microwave or double boiler. Stir until smooth.
  3. In a separate bowl, whisk eggs, egg yolks, and sugar until pale. Gradually whisk in the chocolate mixture, then fold in flour until just combined.
  4. Divide batter among ramekins. Bake for 12-14 minutes, until edges are set but the center is still jiggly. Invert onto plates and serve immediately.
