When I want to celebrate something, big or small, I always make biryani. The rich spices and aromas just fill our home with such joy and make every meal feel special.
Simple Chicken Biryani
Ingredients
- 1 lb chicken thighs, cut into pieces
- 1 cup basmati rice
- 1/2 cup plain yogurt
- 1 onion, sliced
- 1 tbsp biryani masala
- Fresh cilantro and mint for garnish
Steps
- Marinate chicken in yogurt and biryani masala for 30 minutes.
- Cook basmati rice until 70% done and set aside.
- Sauté onions until golden. Add marinated chicken and cook until almost done.
- Layer half the rice over chicken, then add remaining chicken, and top with remaining rice. Cover and cook on low heat for 15-20 minutes until rice is fully cooked and flavors meld. Garnish with fresh herbs.
