Quick Feijoada
Ingredients
- 1 can (15oz) black beans, undrained
- 1 lb smoked sausage, sliced
- 4 strips bacon, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- Cooked white rice for serving
Steps
- Cook diced bacon in a large pot until crispy; remove bacon and set aside.
- Add sliced sausage to the pot with bacon fat and cook until browned; remove sausage.
- Sauté chopped onion and minced garlic in the same pot until fragrant.
- Add black beans (with liquid), cooked sausage, and most of the bacon back to the pot; simmer for 30-40 minutes.
- Serve hot with white rice and garnish with remaining crispy bacon.
