On a hot, relaxed afternoon, nothing cools me down and refreshes me quite like a bowl of vibrant gazpacho. It’s like a garden in a bowl, so healthy and delightful.

Refreshing Spanish Gazpacho

20 minutes (plus chilling time) • Easy

Ingredients

  • 4 ripe tomatoes, roughly chopped
  • 1 cucumber, peeled and chopped
  • 1 green bell pepper, seeded and chopped
  • 1/2 red onion, roughly chopped
  • 2 cloves garlic, crushed
  • 2 slices stale bread, crusts removed (optional)
  • 2 tablespoons red wine vinegar
  • 1/4 cup olive oil
  • 1/2 cup cold water
  • Salt and black pepper to taste

Steps

  1. In a blender, combine tomatoes, cucumber, bell pepper, red onion, garlic, bread (if using), red wine vinegar, olive oil, and cold water.
  2. Blend until very smooth. You can strain it for a silkier texture, or leave it as is for a rustic feel.
  3. Season with salt and pepper to taste. Chill in the refrigerator for at least 2 hours before serving. Serve cold, optionally with a drizzle of olive oil and croutons.
