Refreshing Spanish Gazpacho
Ingredients
- 4 ripe tomatoes, roughly chopped
- 1 cucumber, peeled and chopped
- 1 green bell pepper, seeded and chopped
- 1/2 red onion, roughly chopped
- 2 cloves garlic, crushed
- 2 slices stale bread, crusts removed (optional)
- 2 tablespoons red wine vinegar
- 1/4 cup olive oil
- 1/2 cup cold water
- Salt and black pepper to taste
Steps
- In a blender, combine tomatoes, cucumber, bell pepper, red onion, garlic, bread (if using), red wine vinegar, olive oil, and cold water.
- Blend until very smooth. You can strain it for a silkier texture, or leave it as is for a rustic feel.
- Season with salt and pepper to taste. Chill in the refrigerator for at least 2 hours before serving. Serve cold, optionally with a drizzle of olive oil and croutons.
