There’s something so wonderfully content about biting into a warm, cheesy arepa. It takes me back to my grandmother’s kitchen and those simple, happy mornings.
Simple Arepas con Queso
Ingredients
- 1 cup pre-cooked white cornmeal (Masarepa)
- 1 1/2 cups warm water
- 1 teaspoon salt
- 1 cup shredded mozzarella or any melting cheese
- 2 tablespoons butter or oil for cooking
Steps
- In a medium bowl, combine cornmeal and salt. Gradually add warm water, mixing with your hands until a soft, pliable dough forms. Let rest for 5 minutes.
- Divide the dough into 6-8 equal portions. Flatten each portion into a disk, about 1/2 inch thick. Press a tablespoon of shredded cheese into the center of each disk, then gently seal the dough around the cheese to form a patty.
- Heat butter or oil in a non-stick pan or on a griddle over medium heat. Cook arepas for 5-7 minutes per side, or until golden brown and cooked through, and the cheese is melted.
- Serve warm, often with more cheese or butter if desired.
