Hearty Chicken Noodle Soup
Ingredients
- 1 tbsp olive oil
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onion
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup egg noodles
- Salt and pepper to taste
Steps
- Heat olive oil in a large pot. Sauté carrots, celery, and onion until softened, about 8-10 minutes.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
- Add shredded chicken and egg noodles. Cook for another 8-10 minutes, or until noodles are tender.
