Aromatic Coconut Vegetable Curry

Ingredients

  • 1 tbsp coconut oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp curry powder
  • 1 can (400ml) coconut milk
  • 4 cups mixed vegetables (e.g., cauliflower, potatoes, peas, bell pepper)
  • 1/2 cup vegetable broth
  • Fresh cilantro for garnish

Steps

  1. Heat coconut oil in a large pot. Sauté onion, garlic, and ginger until fragrant. Stir in curry powder and cook for 1 minute.
  2. Add coconut milk and vegetable broth, bring to a simmer. Add the mixed vegetables.
  3. Cover and cook for 20-25 minutes, or until vegetables are tender. Season with salt to taste. Garnish with fresh cilantro before serving.
