Aromatic Coconut Vegetable Curry
Ingredients
- 1 tbsp coconut oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp curry powder
- 1 can (400ml) coconut milk
- 4 cups mixed vegetables (e.g., cauliflower, potatoes, peas, bell pepper)
- 1/2 cup vegetable broth
- Fresh cilantro for garnish
Steps
- Heat coconut oil in a large pot. Sauté onion, garlic, and ginger until fragrant. Stir in curry powder and cook for 1 minute.
- Add coconut milk and vegetable broth, bring to a simmer. Add the mixed vegetables.
- Cover and cook for 20-25 minutes, or until vegetables are tender. Season with salt to taste. Garnish with fresh cilantro before serving.
