Comforting Creamy Tomato Soup

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (800g) crushed tomatoes
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Steps

  1. Sauté onion and garlic in olive oil until soft. Add crushed tomatoes and vegetable broth, bring to a simmer.
  2. Reduce heat and let it cook for 15 minutes. Blend with an immersion blender until smooth.
  3. Stir in heavy cream, season with salt and pepper, and heat gently until warmed through.
