Comforting Creamy Tomato Soup
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (800g) crushed tomatoes
- 2 cups vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
Steps
- Sauté onion and garlic in olive oil until soft. Add crushed tomatoes and vegetable broth, bring to a simmer.
- Reduce heat and let it cook for 15 minutes. Blend with an immersion blender until smooth.
- Stir in heavy cream, season with salt and pepper, and heat gently until warmed through.
