When I’m feeling upbeat and want to share some sunshine, I love to bake a batch of tangy lemon bars. They always bring a smile to everyone’s face!
Zesty Lemon Bars
Ingredients
- 1 cup all-purpose flour
- 1/2 cup cold unsalted butter, cubed
- 1/4 cup powdered sugar
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/4 cup fresh lemon juice
- 2 tbsp all-purpose flour
- 1 tsp lemon zest
Steps
- Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
- For the crust: Combine 1 cup flour, butter, and powdered sugar. Press into the prepared pan and bake for 15-18 minutes until lightly golden. Let cool slightly.
- For the filling: Whisk eggs, granulated sugar, lemon juice, 2 tbsp flour, and lemon zest until smooth.
- Pour the filling over the warm crust. Return to oven and bake for 20-25 minutes, or until the center is set and no longer jiggles.
- Let cool completely before dusting with extra powdered sugar and cutting into bars.
