When I’m feeling upbeat and want to share some sunshine, I love to bake a batch of tangy lemon bars. They always bring a smile to everyone’s face!

Zesty Lemon Bars

45 minutes • Easy

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cold unsalted butter, cubed
  • 1/4 cup powdered sugar
  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/4 cup fresh lemon juice
  • 2 tbsp all-purpose flour
  • 1 tsp lemon zest

Steps

  1. Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  2. For the crust: Combine 1 cup flour, butter, and powdered sugar. Press into the prepared pan and bake for 15-18 minutes until lightly golden. Let cool slightly.
  3. For the filling: Whisk eggs, granulated sugar, lemon juice, 2 tbsp flour, and lemon zest until smooth.
  4. Pour the filling over the warm crust. Return to oven and bake for 20-25 minutes, or until the center is set and no longer jiggles.
  5. Let cool completely before dusting with extra powdered sugar and cutting into bars.
