Sometimes when I’m lost in thought, a cup of tea and a Lamington just feels right. It’s a sweet, comforting treat that reminds me of simpler times.

Quick Lamingtons

30 minutes (+ chilling time) • Medium

Ingredients

  • 1 store-bought pound cake or plain sponge cake
  • 2 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup milk
  • 1 tbsp unsalted butter, melted
  • 2 cups shredded desiccated coconut

Steps

  1. Cut the pound cake into 1.5-inch cubes. Place coconut in a shallow dish.
  2. In a bowl, whisk powdered sugar, cocoa powder, milk, and melted butter until smooth to create the chocolate glaze.
  3. Dip each cake cube into the chocolate glaze, coating all sides. Use a fork to lift it out, allowing excess to drip off.
  4. Immediately roll the glazed cake cube in shredded coconut, ensuring it's fully covered.
  5. Place Lamingtons on a wire rack to set for at least 30 minutes before serving.
