Quick Lamingtons
Ingredients
- 1 store-bought pound cake or plain sponge cake
- 2 cups powdered sugar
- 1/2 cup unsweetened cocoa powder
- 1/4 cup milk
- 1 tbsp unsalted butter, melted
- 2 cups shredded desiccated coconut
Steps
- Cut the pound cake into 1.5-inch cubes. Place coconut in a shallow dish.
- In a bowl, whisk powdered sugar, cocoa powder, milk, and melted butter until smooth to create the chocolate glaze.
- Dip each cake cube into the chocolate glaze, coating all sides. Use a fork to lift it out, allowing excess to drip off.
- Immediately roll the glazed cake cube in shredded coconut, ensuring it's fully covered.
- Place Lamingtons on a wire rack to set for at least 30 minutes before serving.
