Pub Style Fish and Chips
Ingredients
- 2 large cod fillets (6-8 oz each)
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup cold lager or sparkling water
- 4 large potatoes, cut into thick fries
- Oil for deep frying
- Malt vinegar for serving
Steps
- Prepare fries: Soak cut potatoes in cold water for 30 minutes, then pat dry. Fry in oil at 325°F (160°C) for 5-7 minutes until soft; remove and set aside. Increase oil temp to 375°F (190°C).
- For batter: Whisk together flour, baking powder, and salt. Gradually whisk in cold lager or sparkling water until smooth.
- Dip cod fillets into the batter, ensuring they are fully coated. Carefully lower into the hot oil and fry for 5-7 minutes, flipping once, until golden brown and cooked through. Drain on a wire rack.
- Re-fry the par-cooked fries at 375°F (190°C) for 3-5 minutes until golden and crispy. Serve fish and chips hot with malt vinegar.
