Classic Shepherd's Pie
Ingredients
- 1 tbsp olive oil
- 1 lb ground lamb or beef
- 1 onion, chopped
- 1 cup mixed vegetables (peas, carrots, corn)
- 1 cup beef broth
- 1 tbsp tomato paste
- 2 lbs potatoes, peeled and quartered
- 1/4 cup milk
- 2 tbsp butter
Steps
- Heat oil in a large oven-safe skillet. Brown ground meat; drain fat. Add onion and cook until soft. Stir in mixed vegetables, beef broth, and tomato paste; simmer for 10 minutes.
- Meanwhile, boil potatoes until tender. Drain, then mash with milk, butter, salt, and pepper until smooth.
- Spread mashed potatoes over the meat mixture in the skillet. Use a fork to create ridges.
- Bake at 375°F (190°C) for 25-30 minutes, or until the topping is golden brown and the filling is bubbly.
