Classic Shepherd's Pie

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground lamb or beef
  • 1 onion, chopped
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • 2 lbs potatoes, peeled and quartered
  • 1/4 cup milk
  • 2 tbsp butter

Steps

  1. Heat oil in a large oven-safe skillet. Brown ground meat; drain fat. Add onion and cook until soft. Stir in mixed vegetables, beef broth, and tomato paste; simmer for 10 minutes.
  2. Meanwhile, boil potatoes until tender. Drain, then mash with milk, butter, salt, and pepper until smooth.
  3. Spread mashed potatoes over the meat mixture in the skillet. Use a fork to create ridges.
  4. Bake at 375°F (190°C) for 25-30 minutes, or until the topping is golden brown and the filling is bubbly.
