Grandma's Ukrainian Borscht
Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 2 beets, peeled and shredded
- 2 carrots, shredded
- 3 potatoes, cubed
- 1/2 head cabbage, shredded
- 6 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 tbsp vinegar
- Sour cream for serving
- Dill for garnish
Steps
- Heat oil in a large pot. Sauté onion until softened. Add beets and carrots; cook for 10 minutes.
- Stir in potatoes, cabbage, vegetable broth, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 45-60 minutes, until vegetables are tender.
- Stir in vinegar. Season with salt and pepper to taste. Serve hot with a dollop of sour cream and fresh dill.
