Grandma's Ukrainian Borscht

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 beets, peeled and shredded
  • 2 carrots, shredded
  • 3 potatoes, cubed
  • 1/2 head cabbage, shredded
  • 6 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp vinegar
  • Sour cream for serving
  • Dill for garnish

Steps

  1. Heat oil in a large pot. Sauté onion until softened. Add beets and carrots; cook for 10 minutes.
  2. Stir in potatoes, cabbage, vegetable broth, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 45-60 minutes, until vegetables are tender.
  3. Stir in vinegar. Season with salt and pepper to taste. Serve hot with a dollop of sour cream and fresh dill.
