After a long day of working outdoors, a hearty shepherd’s pie just makes me feel utterly content. It’s a satisfying meal that reminds me of home and simpler times.
Traditional Shepherd's Pie
Ingredients
- 1 tbsp olive oil
- 1 lb ground lamb or beef
- 1 onion, chopped
- 2 carrots, diced
- 1 cup frozen peas
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 2 lbs potatoes, peeled and quartered
- 1/4 cup milk
- 2 tbsp butter
- Salt and pepper
Steps
- Preheat oven to 375°F (190°C). Heat oil in a pan, brown ground meat, drain fat. Add onion and carrots; cook until softened.
- Stir in peas, beef broth, and Worcestershire sauce. Simmer for 10 minutes. Pour into a baking dish.
- Boil potatoes until tender. Mash with milk, butter, salt, and pepper until smooth. Spread mashed potatoes over the meat mixture.
- Bake for 25-30 minutes, or until topping is golden brown and filling is bubbly. Let stand 10 minutes before serving.
