Quick Spicy Lentil Soup
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 cup red lentils, rinsed
- 4 cups vegetable broth
- 1 tsp cumin
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
Steps
- Heat olive oil in a pot. Add onion, garlic, and carrot; sauté until softened.
- Stir in lentils, vegetable broth, cumin, turmeric, and cayenne pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 20-25 minutes, or until lentils are tender.
- Season with salt and pepper to taste. Serve hot.
