After a long, tough week at work, there’s nothing that calms my nerves quite like a big bowl of homemade mac and cheese. It’s my ultimate comfort food, a warm hug in a bowl.

Classic Mac and Cheese

40 minutes • Medium

Ingredients

  • 1 lb elbow macaroni
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Steps

  1. Cook macaroni according to package directions; drain well.
  2. In a large saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
  3. Gradually whisk in milk. Bring to a boil, stirring constantly, then reduce heat and simmer for 2 minutes.
  4. Remove from heat. Stir in cheddar cheese, salt, and pepper until cheese is melted and sauce is smooth.
  5. Add cooked macaroni to the cheese sauce and stir to combine. Serve immediately.
