- Beef stew meat (cubed)
- Potatoes
- Carrots
- Onion
- Beef broth
- Fresh thyme
Steps
- Brown beef stew meat in a large pot or Dutch oven.
- Add chopped onion, diced potatoes, and sliced carrots to the pot. Stir for a few minutes.
- Pour in beef broth until meat and vegetables are mostly covered. Add a few sprigs of fresh thyme.
- Bring to a simmer, then cover and cook on low heat for 1 to 1.5 hours, or until beef is tender. Season to taste.
