After a busy week, I just want a moment of calm. A warm cup of Earl Grey and some fresh scones make for the perfect peaceful escape.

Simple Scones

Ingredients

  • Self-rising flour
  • Cold butter
  • Caster sugar
  • Milk
  • Egg (for wash)

Steps

  1. Preheat oven to 400°F (200°C). In a bowl, rub cold butter into self-rising flour until it resembles breadcrumbs, then stir in sugar.
  2. Add milk gradually, mixing until a soft dough forms. Turn onto a floured surface and gently pat to about 1-inch thick.
  3. Cut out rounds with a cookie cutter. Place on a baking sheet, brush tops with beaten egg.
  4. Bake for 12-15 minutes until risen and golden. Serve warm with jam and clotted cream.
