Classic Carbonara

Ingredients

  • Spaghetti
  • Eggs
  • Pecorino Romano cheese
  • Guanciale (or pancetta)
  • Black pepper

Steps

  1. Cook spaghetti according to package directions.
  2. Dice guanciale and fry in a pan until crispy, then set aside.
  3. In a bowl, whisk eggs, grated Pecorino Romano, and a generous amount of black pepper.
  4. Drain hot spaghetti, reserving some pasta water, then quickly add to the pan with the guanciale. Stir in the egg mixture and a splash of pasta water, mixing constantly until creamy. Serve immediately.
