Classic Shepherd's Pie
Ingredients
- 1 tbsp olive oil
- 1 lb ground lamb (or beef)
- 1 onion, chopped
- 1 carrot, diced
- 1 celery stalk, diced
- 1 cup beef broth
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 2 lbs potatoes, peeled and quartered
- 1/4 cup milk
- 2 tbsp butter
- Salt and pepper
Steps
- Preheat oven to 375F (190C). For filling: Brown lamb, drain fat. Sauté onion, carrot, celery. Add broth, tomato paste, thyme; simmer 10 mins.
- For topping: Boil potatoes until tender. Mash with milk, butter, salt, pepper.
- Spread meat filling in an oven-safe dish, top with mashed potatoes. Fork lines on top for texture.
- Bake for 25-30 minutes, or until topping is golden brown and filling is bubbly.
