On a chilly evening, feeling utterly content after a good day, a warm shepherd’s pie is pure bliss. It’s hearty, satisfying, and reminds me of home.

Classic Shepherd's Pie

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground lamb (or beef)
  • 1 onion, chopped
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 2 lbs potatoes, peeled and quartered
  • 1/4 cup milk
  • 2 tbsp butter
  • Salt and pepper

Steps

  1. Preheat oven to 375F (190C). For filling: Brown lamb, drain fat. Sauté onion, carrot, celery. Add broth, tomato paste, thyme; simmer 10 mins.
  2. For topping: Boil potatoes until tender. Mash with milk, butter, salt, pepper.
  3. Spread meat filling in an oven-safe dish, top with mashed potatoes. Fork lines on top for texture.
  4. Bake for 25-30 minutes, or until topping is golden brown and filling is bubbly.
