Brazilian Power Feijoada (Simplified)
Ingredients
- 1 cup black beans, soaked overnight
- 1/2 lb smoked sausage, sliced
- 1/2 lb pork belly, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups water or broth
- Rice for serving
Steps
- Drain and rinse soaked beans. Cook beans in fresh water until tender.
- In a separate pan, brown sausage and pork belly. Remove meat, reserving some fat.
- Sauté onion and garlic in reserved fat until fragrant. Add cooked beans, meat, and water/broth. Bring to a simmer.
- Cook for 45 minutes to 1 hour, allowing flavors to meld and sauce to thicken. Serve hot with rice.
