When I’m in a pensive mood, contemplating life’s big questions, a slow-cooked beef stew is my perfect companion. It’s hearty, comforting, and warms me from the inside out.
Hearty Winter Beef Stew
Ingredients
- 2 lbs beef chuck, cut into chunks
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 tbsp flour
Steps
- Dredge beef in flour, season with salt and pepper. Heat olive oil in a Dutch oven and brown beef on all sides. Remove beef.
- Add onion, carrots, and celery to the pot, sauté until softened. Deglaze with red wine if using, then add beef broth.
- Return beef to the pot. Bring to a simmer, then cover and cook in a 325°F (160°C) oven or on stovetop for 2.5-3 hours, or until beef is very tender.
- Serve hot with crusty bread.
