Hearty Winter Beef Stew

Ingredients

  • 2 lbs beef chuck, cut into chunks
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 tbsp flour

Steps

  1. Dredge beef in flour, season with salt and pepper. Heat olive oil in a Dutch oven and brown beef on all sides. Remove beef.
  2. Add onion, carrots, and celery to the pot, sauté until softened. Deglaze with red wine if using, then add beef broth.
  3. Return beef to the pot. Bring to a simmer, then cover and cook in a 325°F (160°C) oven or on stovetop for 2.5-3 hours, or until beef is very tender.
  4. Serve hot with crusty bread.
