Sunny Seafood Paella

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 cup Arborio rice
  • 4 cups chicken or seafood broth
  • 1/2 lb mixed seafood (shrimp, mussels)
  • Saffron threads, paprika

Steps

  1. Heat olive oil in a large paella pan or wide skillet. Sauté onion and bell pepper until softened.
  2. Add rice and stir for 2 minutes. Stir in broth, saffron, and paprika. Bring to a boil, then reduce heat to low and simmer, uncovered, for 15 minutes.
  3. Nestle seafood into the rice. Continue to simmer for 10-15 minutes more, until rice is cooked and seafood is done. Do not stir.
  4. Remove from heat, cover with foil, and let rest for 5 minutes before serving.
