I feel incredibly grateful when I can gather my loved ones for a simple meal, and a classic roasted chicken is perfect for that. It just feels like home.

Simple Herb Roasted Chicken

1 hour 30 minutes • Medium

Ingredients

  • 1 (3-4 lb) whole chicken
  • 2 tbsp olive oil
  • 1 tbsp dried herbs (rosemary, thyme)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon, halved

Steps

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken dry with paper towels. Rub all over with olive oil, then season with herbs, salt, and pepper. Place lemon halves inside the cavity.
  3. Place chicken in a roasting pan. Roast for 1 hour 15 minutes to 1 hour 30 minutes, or until internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  4. Let chicken rest for 10 minutes before carving. Serve with your favorite roasted vegetables.
