Simple Herb Roasted Chicken
Ingredients
- 1 (3-4 lb) whole chicken
- 2 tbsp olive oil
- 1 tbsp dried herbs (rosemary, thyme)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lemon, halved
Steps
- Preheat oven to 400°F (200°C).
- Pat chicken dry with paper towels. Rub all over with olive oil, then season with herbs, salt, and pepper. Place lemon halves inside the cavity.
- Place chicken in a roasting pan. Roast for 1 hour 15 minutes to 1 hour 30 minutes, or until internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
- Let chicken rest for 10 minutes before carving. Serve with your favorite roasted vegetables.
