Perfect Avocado Toast with Poached Egg
Ingredients
- 2 slices of your favorite bread
- 1 ripe avocado
- 2 large eggs
- 1 tsp white vinegar
- Salt, pepper, red pepper flakes (to taste)
Steps
- Toast bread to your desired crispiness.
- Mash avocado with a fork and season with salt and pepper. Spread evenly on the toasted bread.
- Meanwhile, bring a pot of water to a gentle simmer. Add vinegar. Crack each egg into a small bowl, then gently slide into the simmering water. Poach for 3-4 minutes for runny yolks.
- Carefully remove poached eggs with a slotted spoon. Place one egg on each avocado toast. Season with more salt, pepper, and red pepper flakes. Serve immediately.
