Perfect Avocado Toast with Poached Egg

Ingredients

  • 2 slices of your favorite bread
  • 1 ripe avocado
  • 2 large eggs
  • 1 tsp white vinegar
  • Salt, pepper, red pepper flakes (to taste)

Steps

  1. Toast bread to your desired crispiness.
  2. Mash avocado with a fork and season with salt and pepper. Spread evenly on the toasted bread.
  3. Meanwhile, bring a pot of water to a gentle simmer. Add vinegar. Crack each egg into a small bowl, then gently slide into the simmering water. Poach for 3-4 minutes for runny yolks.
  4. Carefully remove poached eggs with a slotted spoon. Place one egg on each avocado toast. Season with more salt, pepper, and red pepper flakes. Serve immediately.
