On days when I’m completely exhausted, a warm bowl of lentil soup is all I need. It’s nourishing, easy to make, and feels like a warm hug.

Hearty French Lentil Soup

40 minutes • Easy

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup brown or green lentils, rinsed
  • 6 cups vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste

Steps

  1. Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery until softened, about 5-7 minutes.
  2. Stir in rinsed lentils, vegetable broth, and bay leaf. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are tender.
  3. Remove bay leaf. Season with salt and pepper to taste. Serve warm with crusty bread.
