On days when I’m completely exhausted, a warm bowl of lentil soup is all I need. It’s nourishing, easy to make, and feels like a warm hug.
Hearty French Lentil Soup
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup brown or green lentils, rinsed
- 6 cups vegetable broth
- 1 bay leaf
- Salt and pepper to taste
Steps
- Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery until softened, about 5-7 minutes.
- Stir in rinsed lentils, vegetable broth, and bay leaf. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are tender.
- Remove bay leaf. Season with salt and pepper to taste. Serve warm with crusty bread.
