When I’m in the mood for an adventure, even in my kitchen, I love making tacos al pastor. The flavors transport me straight to a bustling street market in Mexico.

Simplified Tacos al Pastor

Ingredients

  • 1 lb pork shoulder, thinly sliced
  • 1/2 cup al pastor marinade (store-bought or homemade)
  • 1/2 cup diced pineapple
  • 1/4 cup chopped white onion
  • Corn tortillas
  • Fresh cilantro for garnish

Steps

  1. Marinate pork slices in al pastor marinade for at least 30 minutes (or overnight).
  2. Heat a large skillet or grill pan over medium-high heat. Cook pork until browned and cooked through, about 5-7 minutes.
  3. Warm corn tortillas. Assemble tacos with cooked pork, diced pineapple, and chopped white onion.
  4. Garnish with fresh cilantro and serve immediately.
