Simple Herb Roasted Chicken
Ingredients
- 1 (3-4 lb) whole chicken
- 2 tbsp olive oil
- 1 lemon, halved
- 2 sprigs fresh rosemary
- 4 sprigs fresh thyme
- Salt and pepper
Steps
- Preheat oven to 400°F (200°C).
- Pat chicken dry. Rub with olive oil, then season generously with salt and pepper. Stuff the cavity with lemon halves, rosemary, and thyme.
- Place chicken in a roasting pan. Roast for 60-75 minutes, or until internal temperature reaches 165°F (74°C).
- Remove from oven, tent with foil, and let rest for 10 minutes before carving.
