When I’m in a thoughtful mood and want to create something special, a classic roast chicken is my go-to. It’s a labor of love that always yields amazing results.

Simple Herb Roasted Chicken

90 minutes • Medium

Ingredients

  • 1 (3-4 lb) whole chicken
  • 2 tbsp olive oil
  • 1 lemon, halved
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • Salt and pepper

Steps

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken dry. Rub with olive oil, then season generously with salt and pepper. Stuff the cavity with lemon halves, rosemary, and thyme.
  3. Place chicken in a roasting pan. Roast for 60-75 minutes, or until internal temperature reaches 165°F (74°C).
  4. Remove from oven, tent with foil, and let rest for 10 minutes before carving.
